Abstract


Purification of soybean lipoxygenase isoenzyme-1 was reinvestigated furnishing a new procedure. Different parameters influencing the hydroperoxide production were studied. Our study focused particularly on the enzyme activity inhibition by the reaction products. Dixon plots revealed competitive inhibition with Ki value of 0.45 and 1.5 mM respectively for 13-linoleic and 13-linolenic acid hydroperoxides.
