Traditional extraction methods for vegetable oils present limitations regarding oil yield and quality preservation. Given the significant role of vegetable oils in human nutrition and health, non-thermal technologies offer alternatives for extraction process optimization. This review examines three principal non-thermal technologies: supercritical fluid extraction (SFE), ultrasound-assisted extraction (UAE), and pulsed electric field (PEF) application. These methods are evaluated based on their effects on extraction yield, oil composition, and the preservation of antioxidant activity in seed oils. SFE exhibits efficacy in enhancing yield, recovering antioxidant compounds, and preserving fatty acid compositions. UAE demonstrates potential for improving extraction efficiency and maintaining antioxidant activity. PEF consistently increases extraction yields, though its impacts on antioxidant properties and fatty acid profiles require additional investigation. These non-thermal technologies present viable alternatives for extraction process optimization, although further research is needed to maximize yield and quality across diverse oil seed varieties.
