Investigación de algunas propiedades fisicoquímicas de mezclas de aceite de cártamo

Resumen


El presente estudio tuvo como objetivo explorar los efectos de la mezcla de aceite de cártamo con aceites de terebinto y linaza en diferentes proporciones (5-20 %) sobre sus propiedades fisicoquímicas, estabilidad oxidativa, perfil de ácidos grasos y calidad sensorial. Las mezclas incluyeron aceite de cártamo enriquecido con 5 %, 10 % y 20 % de aceite de terebinto; 5 %, 10 % y 20 % de aceite de linaza; y mezclas combinadas que contenían 5 % de terebinto + 5 % de linaza o 10 % de terebinto + 10 % de aceites de linaza. El aceite de cártamo puro mostró el mayor contenido fenólico total y actividad de eliminación de radicales, que disminuyó ligeramente después de la mezcla. Los valores de peróxido fueron más bajos en el aceite de cártamo puro y más altos en las mezclas que contenían aceite de linaza. Una mezcla con 10 % de aceites de terebinto y 10 % de linaza exhibió la mejor estabilidad oxidativa. La proporción de ácido oleico alcanzó un máximo del 40,52 % en la mezcla con 10 % de terebinto, mientras que el ácido linoleico disminuyó al 52,92 % en la mezcla con 20 % de linaza. El amargor y el picor aumentaron con mayores niveles de terebinto, aunque la aceptabilidad general se mantuvo alta. Estos resultados sugieren que unas proporciones de mezcla adecuadas pueden mejorar las propiedades oxidativas, nutricionales y sensoriales del aceite de cártamo.
