Análisis general de la composición y atributos de cremas de chocolate comerciales

Resumen


En este estudio, se adquirieron cinco cremas de chocolate comerciales (CCS) en hipermercados de Malasia. Se analizaron las propiedades reológicas de las CCS, mientras que los aceites extraídos se analizaron para determinar su contenido de grasa sólida (SFC), composición de ácidos grasos (FAC), composición de triacilgliceroles (TAG) y calorimetría diferencial de barrido (DSC). El SFC de los aceites extraídos varió significativamente entre 5 °C y 20 °C, observándose el SFC más alto a 5 °C en la CCS E. El principal FAC de todos los aceites extraídos fue el ácido linoleico. Los TAG predominantes identificados en todos los aceites fueron OOO, POO o POP. Los perfiles DSC de los aceites extraídos difirieron entre las muestras. El análisis reológico reveló que todas las CCS eran predominantemente elásticas a todas las temperaturas experimentales. La separación de fases comenzó a ocurrir a 25 °C en algunas CCS. Las características de estas muestras comerciales pueden servir como guía para la formulación de diversas cremas de chocolate a base de palma.
